Christmas Paella



I made this fun and easy to make Paella for Christmas...here's for you to try!!

1/4 cup EVOO (extra virgin oil), 4 times around the pan
1/2 pound precooked chorizo, casings removed, cut into bite-size dice
3/4 pound chicken breast cutlets or tenderloins, cut into bite-size dice
1 medium onion, chopped
4 garlic cloves, fine chopped or grated
1/2 teaspoon red pepper flakes
1 fresh or dried bay leaf
4 to 5 thyme fresh sprigs
1 pound medium shrimp, peeled and deveined
Salt and black pepper
2 1/2 chicken stock
1 teaspoon turmeric
2 cups Christmas shaped pasta (you can use rice or couscous)
1 cup sweet corn ( you can use frozen peas)
2 piquillo peppers or 1 roasted pepper, chopped
Fresh chopped parsley for decoration

Heat the EVOO in a deep skillet over medium-high to high heat. Add the chorizo and render some of its fat, 1 to 2 minutes, then add the chicken and brown, 2 to 3 minutes. Add the onions, garlic, red pepper flakes, bay leaf, thyme, and shrimp; season with salt and black pepper; and cook for 3 to 4 minutes more. Add the stock, turmeric and bring to a boil. add the pasta, corn and puiqillo or roasted pepper. Cover and turn off the heat. Removed the bay leaf and  thyme stems. Top each serving with fresh chopped parsley and Enjoy!!

Christmas Marshmallow Pops


You will need:

*melting chocolate (white & milk in any colors you want)
*Christmas sprinkles
*Marshmallows
*lollipop sticks (small or regular size)
*spoon (to stir the melting chocolate)
*Microwave safe dish (to melt chocolate)
*Wax paper and tray
*Cello bags & ribbons



 

How to:

Star by making lollipops using marshmallows and the lolli sticks. Once you have them ready, go ahead and melt the chocolate in the microwave. Cover each marshmallow pop and decorate right away using sprinkles, after you're done place each marshmallow pop in the tray making sure you have the wax paper on the tray...the was paper makes it easier to work with once they're completely dried. Repeat the steps with each marshmallow pop. Let them dry for at least 30 minutes. Wrapped as desired!!

Some stocking stuffers!!!


A few nights ago my boyfriend and I went to Asbury Park...an old town with a vibe of a mini Brooklyn//Manhattan ..you can find a ton of boutiques, coffee shops, fun stores like "Flying Saucers" a retro kitchenware store...if you're a baker//cook like moi...you must check it out!!
 Look at this cute mold!! you can make anything with them...it's an ice cube tray!!
We are giving this on Christmas as a stocking stuffer to my boyfriend's brother's girl...she is gonna go crazy...she's all about skulls

Apple Timer!!


This Boot stuffer is for my Boyfriend's mom...she would love it!! it's a stainless steel timer in apple shape ...I actualy want to keep it :D

Lollipop cookies!! Yuuuuuuuuuuuuuummm!!!




I will share with you some tips so you can create some cute lollipop cookies on your own! I will start from here because I'm sure we all know the basic steps to make sugar cookie dough :)
1. Prepare the cookie dough
2.Let cookie dough cool inside the fridge. This way you will have a better management when cutting your desired shape.
3.Spread the dough, making sure that you will have space to insert the lollipop sticks.
4.Place lollipop sticks right after you cut each cookie, be careful don't rush...you don't want them to stick out of your cookie!
5.Preheat your oven at 350*C
6.Place cookie lollipop on baking pan, 1" away from each other (because they will expand a little bit)
7.Let them cool ....and let the fun begin!!

Tiny wall...



OK! so you waited enough time for the cookies to cool off...now use your icing to make a tiny wall around the cookie...like you see in the pic, you will end up with an icing ring because of the shape of the cookie....this tiny wall will allow you to apply the first coating and keep it from running all over the place. Your icing needs to be thick so stays in place!! but smooth enough to run easily when you're piping it :)

Apply the first coat...




When you make sure the ring is dry you can start applying the first coat. You want to have a smooth/liquid-ish icing, but not water like because it will run over the ring and you will stain the cookies...and you can imagine the mess you will make trying to keep the icing inside :D so keep it a little thick and help yourself spreading it around with a toothpick if you need to.

Realaxing time :)


 This is how they look when you apply the first coat ... all you have to do now is let them relax. A few hrs. will be fine, but if you feel more comfortable you can let them dry overnight. I recommend to leave them drying over night when the first coating is white because if they're not and you apply another color on top they tend to suck the moist from the new application and you will end up with a blurry effect on your final design...sometimes is not nice looking :(

Swirlssssss!!!!!!!


Once the first coat is completely dry...you can add your decor!...The customer wanted swirls...so I took the orange icing, you need to make sure that your icing is a little thicker like a toothpaste consistency so it won't go around (bleed over the cookie) and if you want to add sugar crystals (like I did on these ones) you have to do it right away before it dries.

Then just let them dry for like hr. and check on them...the icing needs to be really hard before you wrap them or you will loose your design...try anything on them like polka dots, stripes or write your name on them!! Have fun :)

Almost ready to travel...


Once you make sure they are dry...you wrap them up in a clear cello bag and tie really really hard so no air will come in and they can keep fresh!! add matching ribbon and they're ready to go!!! These traveled all the way to NC.

Say I Love You...


For those who think wrapping a gift it's just to cover up whats inside...think again!! Just a few simple touches will make a big difference...and a lasting impression :)
I used a Tiffany blue wrapping tissue paper (the one I use for on my etsy shops) and a small piece of ribbon ( no tape involved) and a little note from one of my Hello Kitty stationary sets...we all have these simple things at home!!! Try it :)


Keep the chic vibe going with cute pattern ribbon!!.. I used polka dots to match the cookie designs :)
